Q: Why does it say in the description that pints and half pints only for water bath?

The description is misleading. You can pressure can all three sizes. However, due to requirements of covering the jars with water, the pot is not tall enough to water bath quart sized jars. It would completely fill the pot, even "if" you had enough space for the water, but it would not function properly. My imagination runs wild thinking what it might do boiling when 100% full!

Q: Why may you recommend only canning quarts. I like using pints and half pints.

You cannot WATER BATH quarts in the 02144 Presto® Digital canner. You may only PRESSURE CAN jars of that size. You may pressure can and water bath both pints and half pints. Q: How do you test the pressure? How do you know if it's holding the correct pressure? Where can I find the testing results?

We have developed programming for the electric canner to match the internal canner and jar temperature profiles that are achieved in a stove top pressure canner, so that the USDA canning guidelines could be used. That programming has been thoroughly tested both at our own facility and at higher altitudes. The electric pressure canner is unique in that it senses temperature rather than pressure. It has been designed and programmed to reach and maintain a specific temperature, 240 degrees. Because it is temperature based, the canner automatically adjusts the pressure to reach and maintain that required canning temperature. The internal temperature remains constant during processing, and does not fluctuate. In addition to the temperature sensing capabilities of the canner it has (1) an automatic venting phase to ensure that a saturated steam environment is present in the canner, (2) a jar warming function, and (3) a digital display that communicates to the user what phase the canner is in (jar warming, venting, canning, cooling. Q: Can you cook foods like soup in this?

Ummm, they have a pressure COOKER (#02143) if you want to cook foods in it. Otherwise, just use a regular sauce pan to cook your soup.
